This One Pot Smoked Sausage Pasta is a hearty, creamy dinner featuring smoky sausage, tender whole wheat bow tie pasta, tomatoes, and melted cheddar cheese. Everything cooks in one pot for a comforting meal with easy cleanup.
Ingredients
3 tablespoons olive oil
2 pounds smoked sausage, sliced into bite-sized pieces
1 medium onion, chopped
3 cloves garlic, minced
2 cups chicken broth
12 ounces diced tomatoes, undrained
1/2 cup heavy cream
1/4 teaspoon black pepper
8 ounces dry whole wheat bow tie pasta
2 cups shredded cheddar cheese, divided
Instructions
- Slice the smoked sausage into bite-sized pieces.
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and smoked sausage, cooking until the onion softens and the sausage is lightly browned.
- Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Add the chicken broth, diced tomatoes with their juices, heavy cream, and black pepper. Stir to combine.
- Add the dry bow tie pasta, ensuring it is submerged in the liquid.
- Cover and simmer for 15 to 20 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
- Remove the pot from the heat and stir in 1 cup of the shredded cheddar cheese until melted and creamy.
- Serve immediately topped with the remaining 1 cup of shredded cheddar cheese.
Notes
Substitute kielbasa, turkey sausage, or andouille sausage for a different flavor.
Add spinach, mushrooms, broccoli, bell peppers, or zucchini for extra vegetables.
For more heat, stir in crushed red pepper flakes or diced jalapeños.
For an even richer sauce, mix in a little cream cheese with the cheddar.
Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
