Description

A sweet and savory grilled cheese featuring creamy melted brie, juicy fresh peaches, honey, and crisp buttery sourdough. Optional fresh thyme adds a fragrant herbal note.


Ingredients

4 slices sourdough bread

4 oz brie cheese, sliced

1 fresh peach, thinly sliced

2 tablespoons unsalted butter, softened

2 teaspoons honey

Fresh thyme leaves, optional


Instructions

  1. Heat a skillet or griddle over medium heat.
  2. Spread softened butter evenly over one side of each slice of sourdough bread.
  3. Place 2 slices of bread in the skillet, buttered sides down.
  4. Arrange the sliced brie evenly over the bread, distributing it toward the edges.
  5. Layer the thinly sliced peaches over the brie.
  6. Drizzle the honey over the peaches and sprinkle with fresh thyme leaves, if using.
  7. Top each sandwich with a second slice of bread, buttered side facing up.
  8. Cook over medium heat until the bottoms are crisp and golden brown, lowering the heat if the bread browns too quickly.
  9. Carefully flip the sandwiches and continue cooking until the second sides are golden brown and the brie is soft and fully melted.
  10. Remove from the skillet and let rest for about 1 minute before slicing and serving warm.

Notes

Use ripe but slightly firm peaches to prevent the sandwiches from becoming soggy.

The brie rind is edible and can be left on, or trimmed for a smoother filling.

For a salty variation, add thinly sliced prosciutto between the brie and peaches.

For extra cheese, add shredded mozzarella, fontina, or mild cheddar.

Pears, apples, nectarines, or figs can replace peaches when they are out of season.

Peach preserves or fig jam can replace the honey.

Chopped walnuts or pecans can be added for extra crunch.

Ciabatta, country-style bread, multigrain bread, or another sturdy loaf can replace sourdough.

Store cooled leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over low to medium-low heat, an air fryer, or a toaster oven for the crispiest results.
