Description

Fresh, juicy peaches are baked with maple syrup, lemon, and cinnamon beneath a golden oat-pecan crumble. This easy summer dessert is delicious served warm on its own or with vanilla ice cream.


Ingredients

67 fresh peaches, sliced

2 tablespoons lemon juice

2 tablespoons maple syrup

1 teaspoon cinnamon

1 tablespoon cornstarch

1 cup rolled oats

1/2 cup almond flour

1/3 cup brown sugar

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/3 cup melted butter or coconut oil

1/2 cup chopped pecans


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, combine the sliced peaches, lemon juice, maple syrup, 1 teaspoon cinnamon, and cornstarch. Gently toss until the peaches are evenly coated.
  3. Spread the peach mixture evenly in the prepared baking dish.
  4. In a separate bowl, combine the rolled oats, almond flour, brown sugar, 1/2 teaspoon cinnamon, salt, and chopped pecans.
  5. Pour the melted butter or coconut oil over the oat mixture and stir until evenly moistened and crumbly.
  6. Sprinkle the crisp topping evenly over the peaches.
  7. Bake for 35–40 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
  8. Remove from the oven and let cool slightly before serving so the filling has time to thicken.

Notes

Peeling the peaches is optional; the skins soften during baking.

For a dairy-free version, use melted coconut oil instead of butter.

Blueberries, raspberries, blackberries, or sliced strawberries can replace part of the peaches.

Walnuts or almonds can be substituted for pecans, or the nuts can be omitted.

Add a pinch of nutmeg, ginger, or cardamom for extra warm spice.

For an extra-crunchy topping, add additional chopped pecans or a few tablespoons of rolled oats.

If using canned peaches, drain them thoroughly. Frozen peaches may require additional baking time.

Store leftovers covered or in an airtight container in the refrigerator for 3–4 days.

Reheat larger portions at 350°F (175°C) for 10–15 minutes to help restore the crisp topping.

Serve warm with vanilla ice cream, whipped cream, Greek yogurt, or vanilla yogurt.
