Description

This Peach Upside Down Cake features tender caramelized peaches layered over a soft, buttery cake with a hint of cinnamon. It’s an easy, elegant dessert that’s perfect for showcasing fresh seasonal peaches.


Ingredients

1/4 cup salted butter (for topping)

1/2 cup brown sugar

1/2 teaspoon ground cinnamon

2 cups peeled and sliced peaches

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup salted butter, softened (for cake)

3/4 cup granulated sugar

1 egg

1/2 cup sour cream

1 teaspoon vanilla extract

1/3 cup milk


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in the bottom of a 9-inch pie plate.
  3. Sprinkle the brown sugar evenly over the melted butter and top with the ground cinnamon.
  4. Arrange the sliced peaches evenly over the sugar mixture and set aside.
  5. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  6. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  7. Mix in the egg, sour cream, and vanilla extract until smooth.
  8. Gradually add the dry ingredients and mix just until combined.
  9. Slowly pour in the milk and stir until the batter is smooth.
  10. Spread the batter evenly over the peach layer.
  11. Bake for 20 minutes, then loosely cover with aluminum foil.
  12. Continue baking for 25 minutes, or until a toothpick inserted into the center comes out clean.
  13. Cool for about 5 minutes, run a knife around the edges, then carefully invert onto a serving platter.
  14. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Notes

Add a pinch of nutmeg for extra warmth.

Substitute some peaches with nectarines for a different flavor.

Sprinkle chopped pecans or walnuts over the peach layer for added crunch.
