Description

Soft vanilla mini cakes topped with juicy peaches and a glossy brown sugar caramel. These individual upside-down cakes are an easy summer dessert that’s delicious served slightly warm.


Ingredients

2 ripe peaches, sliced

2 tablespoons butter or plant-based butter

3 tablespoons brown sugar

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup milk or almond milk

1/4 cup vegetable oil

1 teaspoon vanilla extract

1 egg

Pinch of cinnamon, optional


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease 6 cups of a muffin tin.
  2. Melt the butter and brown sugar in a small pan over medium-low heat, stirring until bubbly, smooth, and caramel-like.
  3. Divide the warm caramel mixture evenly among the bottoms of the prepared muffin cups.
  4. Arrange the peach slices evenly over the caramel in each cup.
  5. In a medium bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon, if using.
  6. In a separate bowl, whisk together the milk, vegetable oil, vanilla extract, and egg until well combined.
  7. Pour the wet ingredients into the dry ingredients and gently stir just until combined. Do not overmix.
  8. Spoon the batter over the peaches, filling each muffin cup about three-quarters full.
  9. Bake for 18–22 minutes, or until a toothpick inserted into the cake portion comes out clean or with a few moist crumbs.
  10. Cool the cakes in the pan for about 5 minutes. Carefully loosen the edges with a thin knife if needed, then invert the cakes onto a serving plate while still warm so the caramelized peaches are on top.

Notes

Serve the mini cakes slightly warm for a soft, glossy peach topping.

For a warmer flavor, add about 1/4 teaspoon ground cinnamon and a tiny pinch of nutmeg to the dry ingredients.

Add a few blueberries or raspberries with the peaches for a peach-and-berry variation.

For an almond variation, use almond milk and add a small splash of almond extract. Garnish with sliced almonds if desired.

Ripe nectarines can be substituted for the fresh peaches.

For a dairy-free version, use plant-based butter suitable for baking and unsweetened almond milk or another dairy-free milk.

Dark brown sugar can be used for a deeper caramel flavor.

Canned peaches can be substituted when fresh peaches are unavailable. Drain and pat them thoroughly dry before using.

The peaches do not need to be peeled, but they can be peeled for a smoother topping.

Store cooled cakes in an airtight container at room temperature for up to 1 day or refrigerate for 3–4 days.

Freeze individually wrapped cakes in a freezer-safe container for up to 2 months and thaw in the refrigerator.

Reheat refrigerated cakes in the microwave for 10–20 seconds or gently warm them in a 300°F (150°C) oven for several minutes.
