Description

These Peanut Butter Cup Chocolate Cookies are soft, fudgy chocolate cookies loaded with peanut butter chips and mini peanut butter cups for the ultimate chocolate and peanut butter treat. Perfect for holidays, parties, or whenever you want an easy homemade dessert.


Ingredients

½ cup unsalted butter, room temperature

¾ cup granulated sugar

¼ cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1 cup plus 2 tablespoons all-purpose flour

½ cup unsweetened cocoa powder

½ teaspoon baking powder

½ teaspoon salt

½ cup peanut butter chips, plus extra for topping

2 cups mini peanut butter cups, some chopped and some left whole, plus extra for topping


Instructions

  1. Preheat the oven to 350°F (175°C) and line one or two baking sheets with parchment paper.
  2. Beat the softened butter for about 2 minutes until light and fluffy.
  3. Add the granulated sugar and brown sugar and beat for 1 to 2 minutes until well combined.
  4. Mix in the egg, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, cocoa powder, and baking powder.
  6. Add the dry ingredients and salt to the butter mixture and mix just until a thick chocolate dough forms. Do not overmix.
  7. Fold in the mini peanut butter cups, reserving a few pieces for topping.
  8. Scoop about 1½ tablespoons of dough for each cookie and place on the prepared baking sheets, leaving space between each cookie.
  9. Press several peanut butter chips into the top of each dough ball.
  10. Bake for 10 to 12 minutes, until the edges are set and the centers are still slightly soft.
  11. Immediately press the reserved peanut butter cups and additional peanut butter chips onto the tops of the warm cookies.
  12. Cool on the baking sheet for several minutes before transferring to a wire rack to cool completely.

Notes

Add semisweet, milk, or dark chocolate chips for extra richness.

Use chopped regular-size peanut butter cups if mini cups are unavailable.

Add chopped roasted peanuts for extra crunch.

For bakery-style cookies, use 3 tablespoons of dough and bake a few minutes longer.

Drizzle cooled cookies with melted peanut butter chips for an extra finish.

Store in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
