Description

These easy no-bake Peanut Butter Pretzel Bites combine creamy peanut butter filling, crunchy salted pretzels, and rich dark chocolate for an irresistible sweet and salty treat. Perfect for parties, holidays, or make-ahead snacking.

Ingredients

1 cup creamy peanut butter

2 tablespoons salted butter, softened

2 tablespoons granulated white sugar

1/4 teaspoon salt

3/4 cup powdered sugar, plus more if needed

72 mini twist pretzels

1 cup dark chocolate chips

Flaky sea salt, optional, for topping

Instructions

  1. In a medium mixing bowl, combine the creamy peanut butter, softened salted butter, granulated white sugar, and salt. Beat with a hand mixer or stand mixer until smooth and well combined.
  2. Gradually add the powdered sugar while mixing on low speed. Continue mixing until a soft, workable dough forms that can be rolled into balls without sticking excessively to your hands.
  3. Line a large freezer-safe baking sheet with parchment paper to prevent sticking.
  4. Scoop approximately 1/2 tablespoon of peanut butter filling and roll it into a small ball. Place it on one mini pretzel and gently press another pretzel on top to create a sandwich. Flatten the filling to approximately 1/2 inch thick without breaking the pretzels. Repeat to make approximately 36 sandwiches.
  5. Arrange the pretzel sandwiches in a single layer on the prepared baking sheet. Freeze for 30 minutes, or refrigerate until the filling becomes firm.
  6. Place the dark chocolate chips in a microwave-safe bowl. Microwave in 15-second intervals, stirring thoroughly after each interval, until completely melted and smooth. Avoid overheating.
  7. Remove the chilled pretzel sandwiches from the freezer. Dip each sandwich halfway into the melted dark chocolate, then return it to the parchment-lined baking sheet. Sprinkle with flaky sea salt while the chocolate is still wet, if desired.
  8. Return the chocolate-dipped pretzel bites to the freezer for approximately 15 minutes, or until the chocolate coating has completely hardened. Serve chilled or transfer to an airtight container in the refrigerator.

Notes

Peanut butter consistency: Regular creamy peanut butter works best for a smooth, stable filling. If using natural peanut butter, stir thoroughly and add extra powdered sugar if necessary.

Sticky filling: If the peanut butter mixture is difficult to roll, add a little more powdered sugar or refrigerate the filling for 10–15 minutes before shaping.

Chocolate variations: Substitute milk chocolate, semi-sweet chocolate, or white chocolate chips for the dark chocolate.

Crunchy variation: Replace creamy peanut butter with crunchy peanut butter for additional texture.

Alternative nut butter: Creamy almond butter can replace peanut butter. Adjust the powdered sugar to achieve a firm consistency.

Chocolate drizzle: Drizzle melted chocolate over the assembled sandwiches instead of dipping them for a lighter coating.

Festive toppings: Add colorful sprinkles immediately after dipping for birthdays, holidays, or celebrations.

Smooth chocolate coating: Melt chocolate slowly in short intervals. If the melted chocolate is too thick, stir in a small amount of coconut oil.

Refrigerator storage: Store in an airtight container with parchment paper between layers for up to 1 week.

Freezer storage: Freeze in a freezer-safe container with parchment paper separating layers for up to 2 months.

Thawing: Transfer frozen bites to the refrigerator and allow them to thaw gradually before serving.

Serving suggestion: Enjoy chilled or leave at room temperature for 5–10 minutes for a slightly softer peanut butter center. Reheating is not recommended.

Make ahead: Prepare 1–2 days before serving and keep refrigerated until needed.
