Description

These Pistachio-Filled Chocolate Dates combine soft, caramel-like Medjool dates with creamy homemade pistachio filling, rich semi-sweet chocolate, and crunchy pistachio toppings. Finished with flaky sea salt, they’re an irresistible no-bake dessert perfect for snacking, gifting, or special occasions.

Ingredients

12 large Medjool dates

1 cup raw pistachios, preferably shelled and unsalted

3 tablespoons sugar

3 tablespoons melted coconut oil, divided

1/8 teaspoon salt

3/4 cup semi-sweet chocolate chips

Chopped pistachios, for topping

Flaky sea salt, for topping

Instructions

  1. Line a baking sheet with parchment paper. Carefully slice one side of each Medjool date and remove the pit. Gently open the dates and arrange them in a single layer on the prepared baking sheet, leaving about 1–2 inches between them.
  2. Place another sheet of parchment paper over the dates. Using the bottom of a measuring cup or drinking glass, gently press each date until flattened. Avoid pressing too hard so the dates remain intact. Remove the top sheet of parchment paper.
  3. Add the raw pistachios, sugar, salt, and 2 tablespoons of melted coconut oil to a small food processor. Process until the pistachios are finely ground and the mixture becomes thick, creamy, and spreadable. Stop occasionally to scrape down the sides of the processor. Continue blending for several minutes if necessary.
  4. Place the semi-sweet chocolate chips and the remaining 1 tablespoon of melted coconut oil in a microwave-safe bowl. Microwave for approximately 40–60 seconds, stirring every 20 seconds. Continue heating in short intervals if needed until the chocolate is completely melted, smooth, and glossy. Avoid overheating.
  5. Spread approximately 1–2 tablespoons of homemade pistachio cream over each flattened date, dividing the filling evenly among all 12 dates. Use the back of a spoon to distribute the filling while leaving a little space around the edges.
  6. Spoon or drizzle the melted chocolate over each pistachio-filled date. Gently spread the chocolate across the filling, leaving some pistachio cream visible around the edges for an attractive layered appearance.
  7. While the chocolate is still melted, sprinkle chopped pistachios over each date. Finish with a small pinch of flaky sea salt to enhance the flavors and balance the sweetness.
  8. Transfer the baking sheet to the refrigerator and chill for at least 2 hours, or until the chocolate is completely set. Once firm, remove the dates from the refrigerator and serve chilled.

Notes

Use large, soft Medjool dates for the best caramel-like sweetness and chewy texture. Smaller or firmer dates may require less filling.

For firmer dates, briefly soak them in warm water to soften, then dry thoroughly before flattening.

For smoother pistachio cream, use a powerful food processor and scrape down the sides frequently. If the mixture is too thick, add a little additional melted coconut oil until spreadable.

For a richer chocolate flavor, substitute 70% dark chocolate for the semi-sweet chocolate chips.

For a sweeter variation, use melted white chocolate instead of semi-sweet chocolate.

For extra crunch, add finely chopped almonds or crushed roasted pistachios to the filling or topping.

For a tropical variation, sprinkle unsweetened shredded coconut over the melted chocolate.

For a citrus twist, add a little finely grated orange zest to the melted chocolate.

Coconut oil can be replaced with a small amount of neutral-flavored oil in the pistachio filling. The chocolate can also be melted without oil, although it may be thicker.

Make ahead: Prepare the dates one day before serving and refrigerate until the chocolate is completely set.

Refrigerator storage: Store in an airtight container with parchment paper between layers for up to 5–7 days for best quality.

Freezer storage: Freeze in a single layer until firm, then transfer to a freezer-safe container or resealable bag. Enjoy within 2 months for the best flavor and texture.

Thawing: Transfer frozen dates to the refrigerator until they reach your preferred texture, or allow them to soften briefly at room temperature.

Reheating is not recommended because the chocolate and pistachio filling may melt and lose their shape.

Serve chilled for firm chocolate and a chewy center, or allow to sit briefly at room temperature for a softer texture.

Nutrition values are approximate per filled date and may vary depending on the size of the dates, chocolate brand, and amount of toppings used.
