Description

These easy Pizza Pot Pies feature golden, buttery biscuit crusts filled with tangy pizza sauce, gooey mozzarella cheese, and savory mini pepperoni. Ready in just 30 minutes, these individual-sized pizza pies are perfect for family dinners, parties, or delicious snacks.

Ingredients

16.3 ounces Pillsbury Grands Original Southern Style Biscuits (8 count)

2 tablespoons olive oil

½ teaspoon Italian seasoning blend, plus extra for garnish if desired

½ teaspoon garlic salt

⅓ cup jarred pizza sauce

1½ cups shredded mozzarella cheese

⅓ cup mini pepperoni rounds

Nonstick cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C). Arrange eight disposable aluminum muffin tins, approximately 3½ inches wide, on a rimmed baking sheet. Lightly coat the inside of each tin with nonstick cooking spray.
  2. Separate the refrigerated biscuit dough into eight individual biscuits. Flatten each biscuit into a disc approximately 4 to 4½ inches wide. Press each disc into a prepared muffin tin, covering the bottom and sides evenly to create a crust.
  3. Using a fork, poke several small holes in the bottom and sides of each biscuit crust to prevent excessive puffing during baking.
  4. In a small bowl, combine the olive oil, Italian seasoning blend, and garlic salt. Stir until the seasonings are evenly distributed.
  5. Using a pastry brush, lightly coat the bottom and sides of each biscuit crust with the seasoned olive oil mixture. Apply a thin, even layer without allowing excess oil to collect at the bottom.
  6. Spoon approximately 1½ to 2 teaspoons of pizza sauce into each biscuit crust. Spread the sauce evenly across the bottom, keeping the layer thin to prevent sogginess.
  7. Divide the shredded mozzarella cheese evenly among the eight biscuit crusts, adding approximately 2 to 3 tablespoons to each pot pie.
  8. Arrange approximately 7 to 8 mini pepperoni rounds over the mozzarella in each pot pie. Sprinkle with additional Italian seasoning if desired.
  9. Transfer the baking sheet to the preheated oven and bake for 20 to 24 minutes, or until the biscuit crusts are golden brown and the mozzarella is completely melted and bubbling. Bake for an additional 1 to 2 minutes if necessary, watching carefully to prevent overbrowning.
  10. Remove the pizza pot pies from the oven and allow them to cool in their tins for approximately 5 minutes. Carefully loosen the edges with a small knife or offset spatula, remove from the tins, and serve warm.

Notes

Use a thick pizza sauce rather than a watery sauce to prevent the biscuit crusts from becoming soggy.

For a Supreme Pizza Pot Pie variation, add finely chopped bell peppers, onions, mushrooms, and cooked sausage. Cook and drain moisture-rich vegetables before adding them.

For a vegetarian version, omit the pepperoni and substitute spinach, mushrooms, bell peppers, or black olives.

For BBQ Chicken Pizza Pot Pies, replace the pizza sauce with barbecue sauce and the pepperoni with cooked shredded chicken. Add red onion and garnish with fresh cilantro after baking.

For a three-cheese variation, combine mozzarella with shredded cheddar and grated Parmesan cheese.

For a spicy variation, add crushed red pepper flakes, sliced jalapeños, or hot sauce. Finish with a drizzle of hot honey if desired.

For breakfast pizza pot pies, replace the pizza sauce and pepperoni with cooked scrambled eggs, crumbled breakfast sausage, and shredded cheddar cheese.

Homemade or store-bought pizza dough can replace refrigerated biscuits, but the crust will be chewier and the baking time may need adjustment.

A regular muffin pan or individual oven-safe baking molds can replace disposable aluminum tins. Adjust the dough and filling quantities to fit smaller cavities.

Serve with a fresh green salad, Caesar salad, steamed broccoli, roasted vegetables, or a light soup. Offer extra pizza sauce, ranch dressing, or garlic dipping sauce on the side.

Store completely cooled leftovers in an airtight container in the refrigerator for up to 3 to 4 days.

To freeze, arrange fully baked and cooled pizza pot pies in a single layer on a baking sheet until firm, then transfer to a freezer-safe container or resealable bag. Use within 2 months for the best quality.

Reheat refrigerated pizza pot pies in a preheated 350°F (175°C) oven for approximately 10 to 15 minutes, or until thoroughly heated.

For air fryer reheating, heat refrigerated pizza pot pies at 325°F (163°C) for approximately 4 to 6 minutes, checking frequently.

Microwave leftovers in short intervals until heated through, although the crust may become softer.

Reheat leftovers to an internal temperature of 165°F (74°C) for food safety.

For make-ahead preparation, bake the pizza pot pies in advance and refrigerate after cooling. Avoid assembling unbaked pies too far ahead because the sauce can soften the biscuit dough.
