Description
A comforting Filipino dessert made with tender plantain bananas simmered in rich brown sugar syrup, finished with chewy tapioca pearls and creamy milk. It can be enjoyed warm or chilled for a satisfying treat.
Ingredients
6 pieces plantain banana (cut diagonally into 3 parts each)
1 cup brown sugar
1 1/2 cup water
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup cooked tapioca pearls
1 can evaporated milk
Instructions
- Bring the water to a boil in a saucepan.
- Add the brown sugar and salt, stirring until fully dissolved.
- Pour in the vanilla extract and let the mixture boil briefly, then reduce heat to medium and simmer for 10 minutes.
- Add the sliced plantain bananas, cover, and cook for another 10 minutes until tender and the syrup thickens.
- Stir in the cooked tapioca pearls and remove from heat.
- Allow the mixture to cool to room temperature or chill in the refrigerator.
- Serve in bowls with ice and pour evaporated milk on top before serving.
Notes
Add sliced jackfruit for extra sweetness and aroma.
Substitute evaporated milk with coconut milk for a richer flavor.
Enhance flavor with a pinch of cinnamon or a pandan leaf while simmering.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently on the stove with a splash of water if the syrup thickens too much.
