Description
This moist, oil-free protein banana bread combines ripe bananas, creamy Greek yogurt, and peanut butter for a soft, tender loaf with delicious natural banana sweetness. Perfect for breakfast, snacking, or dessert, it’s easy to prepare with simple everyday ingredients.
Ingredients
3 ripe bananas, mashed
2 large eggs
⅔ cup Greek yogurt
⅓ cup unsweetened peanut butter, smooth or crunchy
½ cup sugar
1 tablespoon vanilla extract
1⅓ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
¼ cup chopped walnuts (optional)
1 banana, sliced for topping (optional)
Instructions
- Preheat the oven to 350°F (180°C). Lightly grease an 8×4-inch or 9×5-inch loaf pan and line it with parchment paper, leaving some overhang for easy removal.
- Place the 3 ripe bananas in a large mixing bowl and mash with a fork until mostly smooth. A few small lumps are fine.
- Add the eggs, Greek yogurt, peanut butter, sugar, and vanilla extract to the mashed bananas. Whisk until smooth and thoroughly combined.
- Add the all-purpose flour, baking powder, and baking soda. Gently fold the dry ingredients into the wet mixture with a spatula until no dry flour remains. Avoid overmixing to keep the bread tender.
- If using chopped walnuts, gently fold them into the batter. Pour the batter into the prepared loaf pan and smooth the top. Arrange optional banana slices over the surface.
- Bake in the preheated oven for 55–65 minutes, or until the top is golden and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, loosely cover it with aluminum foil.
- Remove the loaf from the oven and allow it to cool in the pan for approximately 15 minutes. Lift it out using the parchment paper and transfer to a wire rack to cool completely before slicing.
- Cut into 12 even slices and serve at room temperature or gently warmed.
Notes
Choose very ripe bananas with plenty of brown spots for the best natural sweetness, moisture, and banana flavor.
Greek yogurt keeps the bread moist and adds protein without requiring oil in the batter. Plain thick regular yogurt can be substituted, although the protein content and texture may differ.
For chocolate chip banana bread, fold ⅓ cup dark chocolate chips into the batter before baking.
For a cinnamon variation, add 1 teaspoon ground cinnamon and an optional pinch of nutmeg to the dry ingredients.
For a peanut butter swirl, warm an additional 1–2 tablespoons peanut butter and swirl it over the batter before baking.
For a whole wheat version, replace half of the all-purpose flour with whole wheat flour. The finished loaf may be slightly denser.
For a berry variation, gently fold in ½ cup blueberries or raspberries lightly coated in flour.
For additional protein, experiment with replacing a small portion of the flour with 2 tablespoons of compatible protein powder. Adjust carefully because protein powders can absorb extra moisture.
For a gluten-free variation, use a one-to-one gluten-free all-purpose flour blend containing a binder such as xanthan gum. Baking time and texture may vary.
Avoid overmixing the batter, which can make the bread dense or gummy. Measure flour carefully and allow the loaf to cool completely before slicing.
Store completely cooled banana bread in an airtight container at room temperature for up to 2 days in a cool kitchen. Refrigerate promptly in warm or humid conditions.
Refrigerate wrapped slices in an airtight container for up to 5 days.
Freeze individually wrapped slices in a freezer-safe bag or container for up to 3 months.
To reheat, microwave an individual slice for 10–20 seconds or warm it loosely wrapped in foil at 300°F (150°C) for 8–10 minutes. A toaster oven also works well.
Thaw frozen slices overnight in the refrigerator before reheating.
Serve with coffee, tea, or a spoonful of Greek yogurt for a satisfying breakfast or afternoon snack.
This recipe contains no added oil in the batter, but peanut butter naturally contributes fat. Greasing the loaf pan may also introduce a small amount of oil unless parchment paper alone is used.
