Description
Fluffy Protein Pumpkin Pancakes made with wholesome oats, pumpkin puree, egg whites, and warm pumpkin pie spice. This easy, high-protein breakfast is delicious, satisfying, and ready in just 15 minutes.
Ingredients
½ cup (40 grams) old-fashioned oats
6 egg whites
90 grams pumpkin puree (about ¼ cup, depending on consistency)
2 tablespoons baking powder (or 1–2 teaspoons for a milder flavor)
2 packets no-calorie sweetener
½ teaspoon pumpkin pie spice
A splash of vanilla extract
Cooking spray, for greasing the skillet
Maple syrup or favorite toppings, for serving (optional)
Instructions
- Add the old-fashioned oats to a blender or food processor. Blend until they form a fine, flour-like consistency with no large oat pieces remaining.
- Add the egg whites, pumpkin puree, baking powder, no-calorie sweetener, pumpkin pie spice, and vanilla extract to the blender. Blend until smooth and well combined. The batter should be slightly thick but pourable. If necessary, add a small splash of water or milk to adjust the consistency.
- Heat a nonstick skillet over low-medium heat and lightly coat it with cooking spray.
- Pour approximately ¼ cup of batter into the skillet for each pancake. Cook for about 1 minute, until the edges begin to set and the underside is lightly golden.
- Carefully flip the pancake with a spatula and cook for another minute, or until the center is fully cooked. Repeat with the remaining batter, adding more cooking spray as needed.
- Stack the cooked pancakes on a plate and serve warm with maple syrup, an extra sprinkle of pumpkin pie spice, Greek yogurt, fresh fruit, or your favorite toppings.
Notes
Baking powder: The original recipe specifies 2 tablespoons, which is a generous amount for one serving. Reduce to 1–2 teaspoons for a milder flavor and more balanced rise.
Batter consistency: If the batter is too thick, add a splash of water or milk. If it is too thin, add a little more oat flour.
Chocolate chip variation: Fold 1 tablespoon of mini chocolate chips into the blended batter before cooking.
Banana variation: Blend in half a ripe banana for natural sweetness and a softer texture. Reduce the sweetener if desired.
Extra protein: Add a small scoop of vanilla protein powder and adjust the batter consistency with milk or water.
Extra spice: Add ¼ teaspoon ground cinnamon for a stronger warming spice flavor.
Nutty variation: Top the pancakes with chopped pecans or walnuts for added crunch.
Dairy-free option: The original batter contains no dairy. Choose dairy-free milk and toppings when needed.
No blender: Substitute store-bought oat flour for the oats. Combine the dry and wet ingredients separately, then mix until smooth.
Whole egg substitution: Replace the egg whites with 2 whole eggs and add a little milk or water if needed. The texture and nutritional values will change.
Refrigerator storage: Cool completely and store in an airtight container for up to 3–4 days. Separate pancakes with parchment paper to prevent sticking.
Freezer storage: Freeze cooled pancakes in a single layer until firm, then transfer to a freezer-safe container or bag. Store for up to 2 months for the best quality.
Microwave reheating: Heat refrigerated pancakes for approximately 20–30 seconds or until warmed through. Reheat frozen pancakes in short intervals until hot.
Skillet reheating: Warm pancakes in a nonstick skillet over low heat for 1–2 minutes per side.
Toaster reheating: Reheat firm pancakes on a low setting, watching carefully to prevent excessive browning.
Serving suggestions: Enjoy with maple syrup, Greek yogurt, sliced bananas, fresh berries, almond butter, chopped nuts, or chocolate chips.
