Description

This Roasted Potato Bowl with Garlic Confit Sauce combines crispy harissa-spiced potatoes, golden chickpeas, and tender roasted broccoli over a creamy roasted garlic yogurt sauce. Finished with toasted almonds, fresh scallions, and Mediterranean-inspired seasonings, it’s a hearty and flavorful vegetarian meal.

Ingredients

1 lb potatoes, chopped into wedges

1 tsp lemon zest

1½ tsp za’atar or dried thyme

2 tsp harissa paste

Sea salt flakes, to taste

1 tbsp olive oil, divided

1½ cups cooked chickpeas, drained

1 medium head broccoli, chopped into florets

1 tsp ground cumin

1 large head garlic

2 tbsp lemon juice

3 tbsp fresh parsley, finely chopped

½ tbsp maple syrup, optional

1 cup plain yogurt or soy yogurt

Sea salt, to taste

8 raw almonds, roughly chopped

1 large scallion, finely chopped

Instructions

  1. Preheat the oven to 400°F (200°C) with the fan on. Prepare a large baking tray for the vegetables and a small oven-safe dish for the garlic.
  2. Remove the loose outer skin from the garlic bulb, keeping the cloves together. Slice approximately ½ inch from the top to expose the cloves. Wrap the garlic in baking paper or place it in a small covered oven-safe dish. Roast for about 40 minutes, until soft, golden, and fragrant. Set aside to cool slightly.
  3. In a large mixing bowl, combine the lemon zest, za’atar or dried thyme, harissa paste, sea salt flakes, and 1½ teaspoons of olive oil. Add the potato wedges and toss thoroughly until evenly coated.
  4. Spread the seasoned potatoes in a single layer on a baking tray, leaving space between the wedges. Place on the middle-to-upper oven rack and roast for approximately 25 minutes.
  5. While the potatoes roast, combine the ground cumin, remaining olive oil, and a pinch of sea salt in the mixing bowl. Add the drained chickpeas and broccoli florets, tossing until evenly coated.
  6. After the potatoes have roasted for 25 minutes, add the seasoned chickpeas and broccoli to the baking tray. Spread everything evenly and return to the oven for another 20 minutes, until the broccoli has golden edges, the chickpeas are lightly crisp, and the potatoes are browned and tender.
  7. Place the roughly chopped almonds in a small oven-safe dish and toast on the lower oven rack for approximately 7 minutes, watching carefully until lightly golden and fragrant. Remove and set aside.
  8. Once the roasted garlic is cool enough to handle, squeeze the softened cloves into a bowl and mash with a fork until smooth. Stir in the lemon juice, chopped parsley, optional maple syrup, and plain yogurt or soy yogurt. Mix until creamy and season with sea salt to taste.
  9. Divide the roasted garlic yogurt sauce between two serving bowls, spreading it across the bottom. Arrange the roasted potatoes, chickpeas, and broccoli over the sauce.
  10. Garnish each bowl with finely chopped scallion and toasted almonds. Serve immediately while the vegetables are warm and the garlic yogurt sauce is cool and creamy.

Notes

Vegan option: Replace traditional plain yogurt with unsweetened soy yogurt or another thick, neutral-flavored plant-based yogurt.

Extra protein: Add crispy baked tofu, grilled tempeh, or additional chickpeas for a more filling meal.

Spicier variation: Increase the harissa paste, add crushed red pepper flakes, or finish with a drizzle of chili oil.

Vegetable substitutions: Replace broccoli with cauliflower, zucchini, carrots, or Brussels sprouts, adjusting the roasting time as needed.

Sweet potato variation: Substitute sweet potatoes for regular potatoes for a naturally sweeter flavor that complements the harissa.

Grain additions: Serve over cooked quinoa, couscous, bulgur, or brown rice to make the meal more substantial or stretch it into additional servings.

Garnish alternatives: Replace almonds with toasted pumpkin seeds, sunflower seeds, or chopped walnuts. Fresh mint, cilantro, or sumac also makes a flavorful finishing touch.

Best potatoes: Yukon Gold and red potatoes develop crispy edges with creamy centers. Russet potatoes work well for an extra-crispy texture.

For crispier potatoes, dry the wedges thoroughly before seasoning, avoid overcrowding the baking tray, and turn them partway through roasting.

Refrigeration: Store leftover roasted vegetables and garlic yogurt sauce separately in airtight containers in the refrigerator for up to 3–4 days.

Oven reheating: Reheat roasted vegetables at 375°F (190°C) for approximately 10–15 minutes, or until thoroughly heated.

Air fryer reheating: Reheat vegetables at 350°F (175°C) for approximately 5–8 minutes, checking frequently.

Microwave reheating: Microwave the vegetables until heated through, although the potatoes and chickpeas may lose some crispiness.

Freezing: Freeze roasted potatoes and chickpeas in a freezer-safe container for up to 2 months for best quality. Avoid freezing the yogurt sauce because it may separate, and note that roasted broccoli may soften after thawing.

Meal prep: Prepare the garlic yogurt sauce and chop the vegetables ahead of time. Keep components separate and add the almonds and scallions just before serving.

Garlic preparation: This recipe uses oven-roasted garlic rather than traditional oil-submerged garlic confit. Roasting produces similarly soft, sweet, and mellow garlic cloves.

Nutrition values are estimates per serving and may vary depending on the potatoes, yogurt, harissa, and optional maple syrup used.
