Description

Samoa Cookie Stuffed Dates combine chewy, caramel-like Medjool dates with toasted coconut, creamy cashew butter, and rich dark chocolate. These easy, no-bake chocolate coconut treats are perfect for a satisfying snack, make-ahead dessert, or holiday platter.

Ingredients

16 large Medjool dates

¾ cup unsweetened shredded coconut

¼ cup creamy cashew butter or almond butter

½ cup dark chocolate chips

1 teaspoon coconut oil

Flaky sea salt, for garnish

Instructions

  1. Prepare the dates: Using a small knife, carefully slice each Medjool date lengthwise without cutting all the way through. Remove the pits, gently open the dates to create pockets, and arrange them on a parchment-lined tray.
  2. Toast the coconut: Preheat the oven to 350°F (175°C). Spread the unsweetened shredded coconut evenly on a parchment-lined baking sheet. Toast for 3–4 minutes, watching carefully, until lightly golden and fragrant. Remove from the oven and allow to cool slightly.
  3. Make the coconut filling: Transfer the toasted coconut to a small mixing bowl. Add the creamy cashew butter or almond butter and stir until the coconut is evenly coated and the mixture becomes thick and slightly sticky.
  4. Stuff the dates: Spoon a small amount of the coconut filling into each pitted date. Gently press the filling into the center, distributing it evenly among all 16 dates. Leave some coconut mixture visible on top for a classic Samoa cookie appearance.
  5. Melt the chocolate: Combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each interval, until completely melted and smooth, approximately 1–1½ minutes. Avoid overheating.
  6. Add the chocolate and salt: Using a spoon, drizzle the melted dark chocolate over each stuffed date. Create thin chocolate ribbons or cover more of the filling, depending on your preference. Immediately sprinkle each date with a small pinch of flaky sea salt.
  7. Chill and serve: Refrigerate the stuffed dates for at least 1 hour, or until the chocolate has completely set. Serve chilled for a firmer texture, or allow them to rest at room temperature for 5–10 minutes for a softer, chewier treat.

Notes

Choose large, soft Medjool dates for the best caramel-like sweetness and chewy texture. If the dates are slightly dry, soak them briefly in warm water and pat dry before filling.

Nut butter substitutions: Replace cashew butter with creamy almond butter, peanut butter, or sunflower seed butter. Smooth varieties help the coconut filling hold together.

Toasting the coconut enhances its nutty flavor and creates a lightly crisp texture. You can skip this step when short on time, although the coconut flavor will be milder.

Chocolate variations: Substitute milk chocolate for a sweeter finish or white chocolate for a creamy coconut variation. For extra chocolate flavor, dip the stuffed dates halfway into melted chocolate instead of drizzling.

For additional crunch, mix 1–2 tablespoons of finely chopped toasted almonds or pecans into the coconut filling.

For a vegan version, choose certified dairy-free dark chocolate chips and plant-based nut butter.

Storage: Keep leftover stuffed dates in an airtight container in the refrigerator for 5–7 days. Separate layers with parchment paper to prevent sticking.

Freezing: Freeze the dates in a single layer until firm, then transfer to a freezer-safe container or resealable bag. Store for up to 2–3 months for the best quality.

Serving: Enjoy directly from the refrigerator or let stand at room temperature for 5–10 minutes before eating. Reheating is not recommended because the chocolate may melt and the filling may soften excessively.

Make-ahead tip: Prepare the dates the night before serving and refrigerate until needed. They are ideal for dessert platters, holiday gatherings, and weekly snack preparation.
