Description

Shepherd’s Pie Tater Tot Casserole is a hearty, comforting one-dish meal featuring seasoned ground beef, mixed vegetables, creamy mushroom soup, crispy tater tots, and melted cheddar cheese. It’s an easy family-friendly dinner that’s perfect for busy weeknights or cozy gatherings.

Ingredients

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can cream of mushroom soup

1 cup frozen mixed vegetables

1 cup shredded cheddar cheese

1 bag frozen tater tots

1 teaspoon salt

1/8 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef, chopped onion, and minced garlic until the beef is browned and the onion is tender.
  3. Drain any excess grease.
  4. Stir in the cream of mushroom soup, frozen mixed vegetables, salt, black pepper, garlic powder, and onion powder until well combined.
  5. Transfer the beef mixture to a casserole dish and spread into an even layer.
  6. Arrange the frozen tater tots in a single layer over the top.
  7. Bake for 30 minutes.
  8. Remove from the oven and sprinkle the shredded cheddar cheese evenly over the tater tots.
  9. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly and the tater tots are golden brown.
  10. Let the casserole rest for 5 minutes before serving.

Notes

Substitute ground turkey or ground chicken for a lighter version.

Use cream of chicken or cream of celery soup for a different flavor.

Add vegetables such as corn, green beans, peas, or diced carrots for extra texture.

Mix in cooked bacon or season with Worcestershire sauce, paprika, or Italian seasoning for added flavor.

Swap cheddar for Monterey Jack, mozzarella, pepper jack, Colby Jack, or a Mexican cheese blend.

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.

Reheat in the microwave or in a 350°F (175°C) oven until heated through for the crispiest topping.

Assemble the casserole a day ahead and refrigerate until ready to bake.
