Description

Soft and chewy snickerdoodle cookies with buttery centers, crackly tops, and a cozy cinnamon-sugar coating. These classic cookies have a subtle tang from cream of tartar and are perfect for any occasion.


Ingredients

2 3/4 cups all-purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

2 large eggs

2 teaspoons vanilla extract

1/4 cup granulated sugar (for rolling)

2 teaspoons ground cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together the flour, cream of tartar, baking soda, and salt in a medium bowl.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture and mix until the dough just comes together.
  6. In a small bowl, stir together the sugar and cinnamon for rolling.
  7. Scoop the dough into 1.5 tablespoon-sized balls and roll each ball in the cinnamon-sugar mixture.
  8. Place the dough balls on the prepared baking sheets about 2 inches apart.
  9. Bake for 9–11 minutes until the edges are set and the tops are slightly cracked.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Add an extra pinch of cinnamon to the dough for a stronger spice flavor.

Use part brown sugar for a richer flavor and slightly softer texture.

Store cookies in an airtight container at room temperature for up to 4 days.

Add a small piece of bread to the container to help keep the cookies soft.

Freeze baked cookies for up to 2 months and thaw at room temperature before serving.

You can freeze the rolled dough balls and bake directly from frozen, adding 1–2 minutes to the baking time.
