Description

Ingredients

2 cups cooked chicken breast, diced or shredded

1 cup canned black beans, drained and rinsed

1 cup corn kernels

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup red onion, finely chopped

1/2 cup shredded cheddar cheese

4 cups romaine lettuce, chopped

1/4 cup fresh cilantro, chopped

1/3 cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt to taste

Black pepper to taste


Instructions

  1. Add the cooked chicken, black beans, corn, cherry tomatoes, avocado, red onion, cheddar cheese, and chopped romaine lettuce to a large mixing bowl.
  2. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, cumin, garlic powder, salt, and black pepper until smooth and creamy.
  3. Pour the dressing over the salad ingredients and gently toss until evenly coated.
