I place the prepared strawberries in a large bowl, sprinkle them with the caster sugar, and stir gently until evenly coated. I set them aside to macerate while I prepare the other ingredients. As they rest, the sugar draws out some of their juices and creates a naturally sweet strawberry syrup.

Then I preheat a barbecue with a hot zone and a cooler zone. When I am cooking indoors, I use a grill pan over medium heat instead. I gently flatten each croissant with a rolling pin so it becomes easier to toast evenly.

I place the flattened croissants on the cooler part of the barbecue or onto the grill pan. Then I toast them on both sides until crisp, golden, and lightly charred around the edges.

I remove the croissants from the heat and allow them to cool slightly. Once they are cool enough to handle, I break them into large, rustic shards.

Next I pour the double cream into a chilled mixing bowl and add the icing sugar and vanilla bean paste. I whip everything together until the cream forms soft peaks. I stop whipping as soon as it holds its shape because I want the cream to remain light and silky.

To assemble the dessert, I arrange generous spoonfuls of vanilla cream with the macerated strawberries and their juices. I tuck the toasted croissant shards between the layers so every portion gets plenty of crunch.
