Description

Ingredients

8 oz cream cheese, softened

1 cup heavy whipping cream

1/3 cup powdered sugar

1 tsp vanilla extract

1 1/2 cups fresh strawberries, diced

1 cup golden cookie crumbs

1 cup all-purpose flour

2 large eggs

1 1/4 cups milk

2 tbsp melted butter

1 tbsp granulated sugar

1/4 tsp salt


Instructions

  1. Beat the softened cream cheese until smooth and creamy.
  2. Mix in the powdered sugar and vanilla extract until fully combined.
  3. Whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture. Refrigerate while preparing the crepes.
  4. Whisk together the flour, eggs, milk, melted butter, sugar, and salt until the batter is smooth.
  5. Let the batter rest for 15 minutes.
  6. Heat a lightly greased nonstick skillet over medium heat. Pour in a small amount of batter and swirl to coat the pan evenly.
  7. Cook each crepe for about 1 minute per side until lightly golden. Transfer to a plate and cool completely.
  8. Spread an even layer of cheesecake filling over each cooled crepe.
