Ingredients
8 oz cream cheese, softened
1 cup heavy whipping cream
1/3 cup powdered sugar
1 tsp vanilla extract
1 1/2 cups fresh strawberries, diced
1 cup golden cookie crumbs
1 cup all-purpose flour
2 large eggs
1 1/4 cups milk
2 tbsp melted butter
1 tbsp granulated sugar
1/4 tsp salt
Instructions
- Beat the softened cream cheese until smooth and creamy.
- Mix in the powdered sugar and vanilla extract until fully combined.
- Whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture. Refrigerate while preparing the crepes.
- Whisk together the flour, eggs, milk, melted butter, sugar, and salt until the batter is smooth.
- Let the batter rest for 15 minutes.
- Heat a lightly greased nonstick skillet over medium heat. Pour in a small amount of batter and swirl to coat the pan evenly.
- Cook each crepe for about 1 minute per side until lightly golden. Transfer to a plate and cool completely.
- Spread an even layer of cheesecake filling over each cooled crepe.
- Sprinkle the diced strawberries and golden cookie crumbs evenly over the filling.
- Roll each crepe tightly and place seam-side down.
- Chill the rolls for at least 30 minutes before slicing and serving.
- Garnish with additional strawberries and cookie crumbs if desired.
Notes
Add blueberries or raspberries for extra berry flavor.
Use crushed graham crackers instead of golden cookie crumbs for a classic cheesecake twist.
Drizzle with melted white chocolate for a richer finish.
Mix a little lemon zest into the filling for a brighter flavor.
Spread a thin layer of strawberry jam over the crepes before filling for added sweetness.
Store covered in the refrigerator for up to 3 days.
Prepare a day ahead and slice just before serving.
Frozen strawberries may be used if thawed and well drained.
Store-bought crepes can be substituted to save time.
Freezing is not recommended, as the filling and strawberries may lose their texture.
