Description

Ingredients

1/2 cup unsalted butter, softened

2 large eggs

4 teaspoons baking powder

1/2 teaspoon salt

1 tablespoon fresh lemon juice

1 tablespoon lemon zest (optional)

2 cups powdered sugar

3 tablespoons fresh lemon juice

1 tablespoon almond milk or regular milk


Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Sift together the flour, baking powder, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Mix in the eggs, vanilla extract, almond milk, fresh lemon juice, and optional lemon zest until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Scoop the dough onto the prepared baking sheets, leaving space between each cookie.
  7. Bake for 8 to 10 minutes, just until the tops spring back lightly when touched. Do not overbake.
