Ingredients
340 g extra-firm tofu
3 tablespoons maple syrup
1 teaspoon vanilla extract
2 tablespoons cocoa powder
3 scoops vegan chocolate protein powder
1/3 cup coconut milk
Pinch of salt
Instructions
- Break the extra-firm tofu into chunks and add it to a blender.
- Add the maple syrup, vanilla extract, cocoa powder, vegan chocolate protein powder, coconut milk, and a pinch of salt.
- Blend until completely smooth and creamy. Add a small splash of extra coconut milk if needed to reach the desired consistency.
- Spoon the mousse into serving cups.
- Chill in the refrigerator before serving for the best texture, or enjoy immediately.
Notes
Add a tablespoon of peanut butter or almond butter for a richer flavor.
Mix in a pinch of espresso powder to enhance the chocolate taste.
Replace maple syrup with agave syrup if desired.
