Description

This Very Veggie Lentil Bake combines tender red lentils, fluffy rice, colorful vegetables, smoky spices, and layers of melted cheddar cheese. A hearty, wholesome vegetarian casserole with a deliciously golden, cheesy topping.

Ingredients

110 g red lentils

75 g white rice

650 ml vegetable stock

1 tablespoon oil

1 small leek, sliced

1 bell pepper, diced fairly small

5 medium mushrooms, diced fairly small

1 small courgette (zucchini), diced fairly small

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper

Black pepper, to taste

90 g grated cheddar cheese

Instructions

  1. Add the red lentils, white rice, and vegetable stock to a medium saucepan. Bring to a boil, then cook for approximately 15–20 minutes, stirring occasionally. Stir constantly during the final 5 minutes to prevent sticking. Do not drain; continue cooking until the excess liquid evaporates and the mixture becomes thick and porridge-like.
  2. Meanwhile, heat the oil in a large frying pan over medium heat. Add the sliced leek, diced bell pepper, mushrooms, and courgette. Sauté for 5–10 minutes, stirring occasionally, until the vegetables are tender and most of their excess moisture has evaporated.
  3. Preheat the oven to 190°C (375°F/Gas Mark 5). Lightly grease a medium-sized baking dish if necessary.
  4. Transfer the cooked lentil and rice mixture to a large mixing bowl. Add the sautéed vegetables, smoked paprika, cayenne pepper, and black pepper. Stir thoroughly until evenly combined. Taste and adjust the seasoning if needed.
  5. Spoon half of the lentil and vegetable mixture into the prepared baking dish and spread evenly. Sprinkle with half of the grated cheddar cheese. Add the remaining lentil mixture, smooth the surface, and sprinkle the remaining cheddar evenly over the top.
  6. Bake in the preheated oven for approximately 25–30 minutes, until the cheese is completely melted and the surface is golden brown with slightly crispy edges.
  7. Remove from the oven and allow the bake to rest for approximately 5 minutes before serving. Serve hot with a fresh green salad or steamed vegetables.

Notes

For the best texture, cook the lentils and rice until thick and creamy. Avoid draining the mixture, as its starch helps bind the bake together.

Cook the mushrooms and courgette until their excess moisture evaporates to prevent a watery casserole.

For an extra cheesy version, add more grated cheddar or substitute part of the cheddar with mozzarella.

For additional heat, increase the cayenne pepper or add chili flakes or a little hot sauce.

For a Mediterranean-inspired variation, replace the smoked paprika with dried oregano and basil. Add sun-dried tomatoes, spinach, olives, or crumbled feta.

For a vegan version, replace the cheddar with dairy-free melting cheese and use vegan-friendly vegetable stock.

Additional vegetables such as carrots, spinach, peas, broccoli, or sweetcorn can be included. Cook firm or moisture-rich vegetables before adding them.

Cooked brown rice can replace white rice, but it should be prepared separately because it requires a longer cooking time.

Serve with a crisp green salad, steamed broccoli, roasted carrots, sautéed green beans, or cucumber and tomato salad.

For extra creaminess, serve with a spoonful of plain yogurt or sour cream.

For make-ahead preparation, cook the lentils, rice, and vegetables in advance. Assemble with the cheese, refrigerate promptly, and bake within 24 hours.

Cool leftovers quickly and refrigerate promptly in airtight containers. Because the recipe contains cooked rice, use refrigerated leftovers within 24 hours for a cautious approach.

Freeze cooled individual portions in freezer-safe containers for up to 2–3 months for the best quality.

Reheat in a covered oven-safe dish at 180°C (350°F) until piping hot throughout. Add a splash of vegetable stock if the mixture appears dry.

Alternatively, microwave individual portions in short intervals until steaming hot throughout. Reheat each portion only once.
