Ingredients
3 lb seedless watermelon, chilled and cut into 1-inch cubes
8 oz feta cheese, crumbled
3/4 cup fresh basil, chopped
1/3 cup extra virgin olive oil
Juice of 2 limes
1 1/2 teaspoons salt, or to taste
1 teaspoon freshly ground black pepper
Instructions
- Cut the chilled watermelon into 1-inch cubes and remove any seeds if necessary.
- In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper until well combined.
- Place the watermelon cubes, crumbled feta, and chopped basil into a large serving bowl.
