Description

A creamy and refreshing almond pistachio frozen yogurt with a naturally sweet flavor and a delightful nutty crunch. Made without an ice cream machine, it is simple and satisfying.


Ingredients

2 cups plain Greek yogurt

1/2 cup unsweetened almond milk

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1/3 cup shelled pistachios, finely chopped

1/4 cup slivered almonds

Pinch of salt


Instructions

  1. In a mixing bowl, combine Greek yogurt, almond milk, honey or maple syrup, vanilla extract, almond extract, and salt. Stir until smooth and well blended.
  2. Fold in the chopped pistachios and slivered almonds until evenly distributed.
  3. Pour the mixture into a shallow freezer-safe container and spread evenly.
  4. Freeze for 2 to 3 hours, stirring every 30 minutes to break up ice crystals and maintain a creamy texture.
  5. Serve once it reaches a soft-serve consistency, or freeze longer for a firmer texture. Let sit at room temperature for a few minutes before scooping if fully frozen.

Notes

Swap honey for maple syrup for a deeper flavor.

Add orange zest or mini chocolate chips for variation.

Top with extra chopped pistachios or almonds for added crunch.

Store in an airtight container in the freezer for up to 2 weeks.

Let sit at room temperature for 5 to 10 minutes before serving if too firm.
