Description

These Brown Sugar Glazed Carrots are tender, buttery, and perfectly caramelized with a sweet and savory glaze. They make an easy and comforting side dish for holidays or weeknight dinners.

Ingredients

2 lb carrots, peeled and cut into even pieces

1/4 cup brown sugar

2 garlic cloves, minced

2 tablespoons butter, melted

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F.
  2. Place the carrots in a large bowl with the brown sugar, minced garlic, melted butter, olive oil, salt, and black pepper.
  3. Toss everything together until the carrots are evenly coated in the glaze.
  4. Spread the carrots onto a baking tray in a single layer.
  5. Roast for 15 minutes, then gently toss the carrots.
  6. Roast for another 10 minutes until the carrots are tender and caramelized around the edges.
  7. Toss the roasted carrots in the glaze left on the tray, sprinkle with fresh parsley, and serve warm.

Notes

Add a pinch of cinnamon for a warm holiday flavor.

Sprinkle grated parmesan over the carrots before serving for extra savory flavor.

Drizzle with honey or maple syrup for a richer glaze.

Add crushed red pepper flakes for a touch of heat.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheat in a skillet or oven for the best caramelized texture.
