This Chocolate Pie is one of my favorite desserts when I want something rich, creamy, and deeply chocolatey. I make it with a flaky, buttery pie crust and a smooth homemade chocolate custard filling that becomes beautifully silky once chilled. I especially like serving this classic pie for holidays, family gatherings, and special occasions, although it is simple enough for me to make whenever I am craving a homemade chocolate dessert.

Ingredients

(Tip: You’ll find the full list of ingredients and measurements in the recipe card below.)

1 pie crust, homemade or store-bought

1½ cups granulated sugar (300g)

½ cup unsweetened cocoa powder (50g)

2 cups whole milk or evaporated milk (480ml)

4 large egg yolks

3 tablespoons all-purpose flour

½ teaspoon salt

¼ cup unsalted butter, cubed (57g)

1 teaspoon vanilla extract

Whipped cream, for serving

Directions

I preheat the oven to 400°F (200°C).

I line a 9-inch pie pan with the pie crust and crimp the edges as desired. Then I line the crust with parchment paper and fill it with pie weights. I place the pie pan on a rimmed baking sheet and bake the crust for 20 minutes.

I carefully remove the parchment paper and pie weights, then return the crust to the oven for another 10 to 15 minutes. Then I bake it until it looks golden brown and dry, then let it cool completely before adding the filling.

While the crust cools, I whisk the granulated sugar and cocoa powder together in a medium saucepan. I gradually whisk in 1½ cups (360ml) of the milk until the mixture is smooth.

I place the saucepan over medium-high heat and bring the mixture to a gentle simmer while stirring frequently. Once it begins simmering, I reduce the heat to medium-low.

In a large heat-proof bowl, I whisk the remaining ½ cup (120ml) milk with the egg yolks, flour, and salt until smooth.

I slowly whisk the hot cocoa mixture into the egg mixture. Adding it gradually helps me combine the hot liquid with the yolks without scrambling them. Once combined, I pour everything back into the saucepan.

Next I cook the filling over medium-low heat, stirring constantly, for about 5 minutes. I continue cooking until the chocolate custard becomes thick and starts to bubble.

I remove the saucepan from the heat and stir in the cubed butter and vanilla extract. Then I keep stirring until the butter has completely melted and the filling looks glossy and smooth.

For an especially silky filling, I like to pass the custard through a fine-mesh sieve. I then pour the warm chocolate filling into the completely cooled pie crust.

I refrigerate the pie for at least 4 hours so the custard has enough time to chill and set. When possible, I leave it in the refrigerator overnight for an even firmer texture.

Once chilled, I slice the pie and serve it with whipped cream if desired.

Servings and Timing

This recipe makes 8 servings.

Prep Time: 30 minutes

Cooking Time: 35 minutes

Chilling Time: at least 4 hours

Total Time: approximately 5 hours

Calories: approximately 470 kcal per serving

I keep in mind that most of the total time is hands-off chilling time. For the easiest preparation, I like making this chocolate pie the day before I need it.

Variations

Chocolate Cookie Crust: When I want an even more intense chocolate dessert, I replace the traditional pastry crust with a chocolate cookie crumb crust. The extra cocoa flavor pairs especially well with the creamy custard.

Graham Cracker Crust: I sometimes use a graham cracker crust when I want to skip the traditional pastry crust. It gives me a slightly sweeter pie with a pleasant crumbly texture.

Espresso Chocolate Pie: I can add a small amount of instant espresso powder to the cocoa mixture. I find that coffee deepens the chocolate flavor without necessarily making the finished pie taste strongly like coffee.

Extra Dark Chocolate: For a richer filling, I sometimes stir finely chopped dark or bittersweet chocolate into the hot custard along with the butter. I stir until everything melts and becomes completely smooth.

Chocolate Cream Pie: I turn this into an extra-creamy dessert by spreading or piping a generous layer of whipped cream over the completely chilled filling. I can finish it with chocolate curls, grated chocolate, or a light dusting of cocoa powder.

Storage/Reheating

I store leftover chocolate pie covered tightly in the refrigerator for up to 1 week. I either cover the entire pie dish or transfer individual slices to an airtight container to keep the custard from absorbing other refrigerator odors.

Also I always keep this pie refrigerated because of its milk-and-egg custard filling. If I am serving it at a gathering, I return leftovers to the refrigerator rather than leaving them at room temperature for an extended period.

I don’t reheat this chocolate pie. The custard is designed to be served chilled, and heating it can soften the filling and affect its smooth texture. I usually take a slice directly from the refrigerator shortly before serving.

If I want to prepare the dessert ahead, I make and chill the entire pie the day before serving. I prefer adding whipped cream shortly before serving so it stays fresh and fluffy.

FAQs

How do I know when the chocolate pie filling is thick enough?

I look for a thick, pudding-like consistency. After several minutes of cooking and constant stirring, the filling should begin bubbling and should noticeably coat my spoon or spatula. I avoid removing it from the heat too early because sufficient cooking helps the custard set properly after chilling.

Why is my chocolate pie filling runny?

When my filling is too loose, I first consider whether it was cooked long enough. The custard needs to thicken and begin bubbling before I remove it from the heat. I also make sure I give the finished pie at least 4 hours in the refrigerator because the filling continues to firm considerably as it cools.

Can I make chocolate pie ahead of time?

Yes. In fact, I prefer making this pie ahead of time because the custard needs several hours to set. I can prepare it the evening before serving and leave it covered in the refrigerator overnight. I add whipped cream before serving for the freshest presentation.

Can I use a store-bought pie crust?

Yes. When I want to save time, I use a store-bought pie crust and blind-bake it according to the recipe. When I have extra time, I use a homemade buttery crust. Both options work well because the most important step is making sure the crust is fully baked and cooled before I add the chocolate filling.

Why should I strain the chocolate filling?

I strain the custard when I want the smoothest possible chocolate filling. Passing it through a fine-mesh sieve helps me remove any small cooked egg pieces or flour lumps that may have formed during cooking. It isn’t essential, but I find it gives the finished pie an especially silky texture.

Conclusion

This Chocolate Pie is the kind of classic dessert I return to whenever I want something comforting, rich, and unmistakably chocolatey. I love the contrast between the flaky golden crust and the cool, silky chocolate custard, especially with a generous spoonful of whipped cream on top.

I also appreciate how easily I can prepare it ahead of time. Once the pie is chilling in the refrigerator, most of the work is finished. Whether I am making dessert for a holiday table, a family dinner, or simply satisfying a chocolate craving, this homemade chocolate pie gives me a timeless dessert that feels special without being overly complicated.

Notes

Make sure the crust is fully baked and completely cooled before adding the chocolate filling.

Straining the cooked custard through a fine-mesh sieve is optional but creates an especially silky texture.

For a chocolate cookie or graham cracker variation, replace the pastry crust with your preferred prepared crumb crust.

For deeper chocolate flavor, add a small amount of instant espresso powder to the cocoa mixture.

For an extra-rich filling, stir finely chopped dark or bittersweet chocolate into the hot custard with the butter.

Store the pie tightly covered in the refrigerator for up to 1 week. Do not reheat; this pie is best served chilled.

The pie can be prepared a day ahead. Add whipped cream shortly before serving for the freshest texture.
