This no-bake Oreo Pie is one of my favorite desserts when I want something rich, creamy, and full of cookies-and-cream flavor without turning on the oven. I make it with a crunchy Oreo crust and a fluffy cream cheese filling loaded with chopped Oreo cookies. After several hours in the refrigerator, the filling becomes wonderfully thick and sliceable while staying light and creamy. 24 Oreos (275g)

¼ cup unsalted butter, melted (56g)

1 cup heavy whipping cream (240mL)

1 (8-ounce/226g) block cream cheese, at room temperature

¾ cup confectioners’ sugar (90g)

1½ teaspoons vanilla extract

20 Oreos, chopped (230g), plus additional Oreos for garnish

Directions

I start by lightly coating a 9-inch pie pan with cooking spray.

I place 24 Oreos in a food processor and pulse them for about 30 to 45 seconds, or until they turn into fine crumbs.

Then I transfer the Oreo crumbs to a medium bowl and stir in the melted butter until all of the crumbs are evenly moistened.

I firmly press the mixture across the bottom and up the sides of the prepared pie pan. I freeze the crust for at least 30 minutes while I prepare the filling. If I am preparing the recipe ahead, I can keep the crust frozen for up to 3 days.

For the filling, I pour the heavy whipping cream into a large bowl and beat it with an electric mixer on medium-high speed for about 2 minutes, until stiff peaks form.

In a separate large bowl, I beat the room-temperature cream cheese for about 2 minutes, until it becomes smooth and fluffy.

I add the confectioners’ sugar and vanilla extract to the cream cheese and continue beating until the mixture is completely smooth and well combined.

I gently fold the whipped cream into the cream cheese mixture. Then I continue folding just until the mixture is uniform and no visible streaks remain.

Next I fold in the chopped Oreos, making sure the cookie pieces are distributed throughout the creamy filling.

I spoon the Oreo filling into the chilled crust and spread the top into an even layer.

Then I loosely cover the pie and refrigerate it for at least 6 hours so the filling has enough time to become firm and fully set. I can also refrigerate it for up to 2 days before serving.

Just before serving, I decorate the pie with whipped cream and additional chopped or whole Oreos. I slice it while cold for the neatest pieces.

Variations

Extra Chocolate Oreo Pie:

When I want an even richer chocolate dessert, I mix a little melted and cooled semisweet chocolate into the cream cheese mixture before folding in the whipped cream. I can also finish the pie with a drizzle of chocolate sauce.

Peanut Butter Oreo Pie:

I sometimes beat creamy peanut butter into the cream cheese mixture for a chocolate-and-peanut-butter version. I reduce the confectioners’ sugar slightly if I want to keep the filling from becoming overly sweet.

Mint Oreo Pie:
