Ingredients

1 small green cabbage, finely chopped

1 large cucumber, diced

2 green onions, sliced

1/4 cup fresh chives, chopped

1 cup fresh basil leaves

1 cup fresh spinach

2 cloves garlic

1 small shallot

1/4 cup walnuts

1/4 cup nutritional yeast

Juice of 2 lemons

2 tablespoons olive oil

1/4 cup rice vinegar

1/2 teaspoon salt


Instructions

  1. Finely chop the cabbage, cucumber, green onions, and chives, then add them to a large mixing bowl.
  2. In a blender or food processor, combine basil, spinach, garlic, shallot, walnuts, nutritional yeast, lemon juice, olive oil, rice vinegar, and salt.
  3. Blend until smooth and creamy, scraping down the sides as needed.
  4. Pour the dressing over the chopped vegetables.
