Garlic Balsamic Steak Bites are one of my favorite hearty meals when I want something packed with flavor and protein. I coat tender steak bites in a rich garlic balsamic glaze and pair them with crispy roasted baby potatoes and perfectly seasoned green beans. This meal feels like a steakhouse dinner while being simple enough for busy weeknights or meal prep.

Ingredients

(Tip: You’ll find the full list of ingredients and measurements in the recipe card below.)

For the Steak & Marinade:

2 lb lean steak, trimmed and cut into 1-inch cubes

1 tbsp olive oil

2 tbsp soy sauce

2 tbsp balsamic vinegar

½ tsp salt

½ tsp black pepper

¼ tsp crushed red pepper (optional)

½ tbsp garlic powder

For the Garlic Balsamic Glaze:

3 cloves garlic, minced

2 tbsp balsamic vinegar

2 tbsp low-sodium beef broth

1 tsp honey

1 tbsp soy sauce

For the Potatoes:

1.5 lb baby gold potatoes, quartered

½ tbsp olive oil

½ tsp salt

1 tsp paprika

½ tsp black pepper

½ tbsp garlic powder

For the Green Beans:

½ tbsp olive oil

½ tsp salt

12 oz fresh green beans, trimmed

½ tsp black pepper

½ tbsp garlic powder

Directions

I combine the olive oil, soy sauce, balsamic vinegar, salt, pepper, garlic powder, and crushed red pepper in a large bowl.

I add the steak cubes and toss them well to coat evenly, then marinate them in the refrigerator for at least 30 minutes.

Then I preheat the oven to 425°F (220°C).

I toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika before spreading them onto a baking sheet. I roast them for 20–25 minutes, turning them halfway through cooking.

Next I season the green beans with olive oil, salt, pepper, and garlic powder, then roast them on a separate baking sheet during the last 12–15 minutes of the potatoes’ cooking time.

I heat a large skillet over medium-high heat and sear the steak bites in batches for 2–3 minutes per side until nicely browned. I remove them from the skillet and set them aside.

In the same skillet, I sauté the minced garlic for about 30 seconds until fragrant.

I add the balsamic vinegar, beef broth, honey, and soy sauce, then simmer the mixture for about 2 minutes until it becomes glossy and slightly thickened.

I return the steak bites to the skillet and toss them until they are fully coated in the garlic balsamic glaze.

Next I divide the roasted potatoes and green beans among serving plates or meal prep containers.

I top everything with the glazed steak bites and spoon the remaining sauce over the meal before serving.

Variations

I swap the steak for chicken breast for a different protein option.

I replace the baby potatoes with sweet potatoes for extra natural sweetness.

Also I add mushrooms, broccoli, or asparagus alongside the green beans for more vegetables.

I sprinkle grated Parmesan over the potatoes just before serving for extra richness.

I use maple syrup instead of honey when I want a slightly deeper sweetness in the glaze.

Storage/Reheating

I store the leftovers in airtight containers in the refrigerator for up to 4 days. For longer storage, I freeze the steak and vegetables in freezer-safe containers for up to 2 months. When I am ready to eat, I thaw overnight in the refrigerator if frozen and reheat everything in a skillet over medium heat or in the microwave until thoroughly warmed. I like adding a splash of beef broth while reheating to keep the steak juicy.

FAQs

Can I use a different cut of steak?

I like using lean steak, but sirloin, ribeye, New York strip, or flank steak all work well for this recipe.

How do I keep the steak tender?

I marinate the steak before cooking and avoid overcrowding the skillet so each piece sears instead of steaming.

Can I prepare this meal ahead of time?

Yes. I often prepare all four servings in advance because the flavors hold up well for several days in the refrigerator.

Can I cook the vegetables in an air fryer?

Yes. I like air frying the potatoes until crispy and cooking the green beans separately for a quick alternative to roasting.

What can I serve with this meal?

I enjoy serving it as a complete meal on its own, but I also like pairing it with rice, cauliflower rice, or a fresh side salad for extra variety.

Conclusion

I love making these Garlic Balsamic Steak Bites because they deliver restaurant-quality flavor with everyday ingredients. The tender glazed steak, crispy roasted potatoes, and perfectly seasoned green beans create a balanced meal that is satisfying, protein-packed, and ideal for both weeknight dinners and meal prep. I always enjoy how simple it is to prepare while still feeling like a special homemade meal.
