Description
Garlic Balsamic Steak Bites are tender, flavorful steak cubes coated in a rich garlic balsamic glaze and served with crispy roasted baby potatoes and seasoned green beans. This hearty, protein-packed meal is perfect for weeknight dinners or meal prep.
Ingredients
2 lb lean steak, trimmed and cut into 1-inch cubes
1 tbsp olive oil (for steak marinade)
2 tbsp soy sauce (for marinade)
2 tbsp balsamic vinegar (for marinade)
1/2 tsp salt (for marinade)
1/2 tsp black pepper (for marinade)
1/2 tbsp garlic powder (for marinade)
1/4 tsp crushed red pepper (optional)
3 cloves garlic, minced
2 tbsp balsamic vinegar (for glaze)
2 tbsp low-sodium beef broth
1 tsp honey
1 tbsp soy sauce (for glaze)
1.5 lb baby gold potatoes, quartered
1/2 tbsp olive oil (for potatoes)
1/2 tsp salt (for potatoes)
1/2 tsp black pepper (for potatoes)
1/2 tbsp garlic powder (for potatoes)
1 tsp paprika
12 oz fresh green beans, trimmed
1/2 tbsp olive oil (for green beans)
1/2 tsp salt (for green beans)
1/2 tsp black pepper (for green beans)
1/2 tbsp garlic powder (for green beans)
Instructions
- In a large bowl, combine the olive oil, soy sauce, balsamic vinegar, salt, black pepper, garlic powder, and crushed red pepper. Add the steak cubes, toss to coat, and marinate in the refrigerator for at least 30 minutes.
- Preheat the oven to 425°F (220°C).
- Toss the potatoes with olive oil, salt, black pepper, garlic powder, and paprika. Spread onto a baking sheet and roast for 20–25 minutes, turning halfway through.
- Toss the green beans with olive oil, salt, black pepper, and garlic powder. Roast on a separate baking sheet during the last 12–15 minutes of the potatoes’ cooking time.
- Heat a large skillet over medium-high heat. Sear the steak bites in batches for 2–3 minutes per side until browned. Remove and set aside.
- In the same skillet, sauté the minced garlic for about 30 seconds until fragrant.
- Add the balsamic vinegar, beef broth, honey, and soy sauce. Simmer for about 2 minutes until slightly thickened and glossy.
- Return the steak bites to the skillet and toss until evenly coated in the garlic balsamic glaze.
- Divide the roasted potatoes and green beans among serving plates or meal prep containers.
- Top with the glazed steak bites and spoon the remaining sauce over everything before serving.
Notes
Sirloin, ribeye, New York strip, or flank steak all work well.
Do not overcrowd the skillet to ensure the steak sears instead of steams.
Swap baby potatoes for sweet potatoes if desired.
Add mushrooms, broccoli, or asparagus for extra vegetables.
Sprinkle grated Parmesan over the potatoes before serving for added richness.
Use maple syrup instead of honey for a deeper sweetness.
Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
Reheat with a splash of beef broth to help keep the steak juicy.
