For the Lasagna:
12 lasagna noodles
2 cups sliced or shredded mozzarella cheese
¼ cup grated Parmesan cheese

Directions
I preheat my oven to 375°F (190°C).
I heat a large Dutch oven over medium-high heat. Then I add the Italian sausage and ground beef, breaking the meat into smaller pieces as it cooks. I cook it for 6–8 minutes, or until nicely browned.
Next I stir in the diced onion and minced garlic and cook everything for about 5 minutes, until the onion has softened and the garlic is fragrant.

Then I stir in the crushed tomatoes, tomato sauce, sugar, Italian seasoning, 1½ teaspoons salt, dried basil, and ¾ teaspoon black pepper. I bring the sauce to a gentle simmer.
I reduce the heat to medium-low and let the sauce simmer for 15–20 minutes, stirring occasionally, until it has thickened slightly.
While the sauce simmers, I prepare the ricotta filling. In a medium bowl, I combine the ricotta, beaten egg, fresh parsley, ½ teaspoon salt, and ¼ teaspoon black pepper. I mix everything until evenly combined and set it aside.
Next I bring a large pot of salted water to a boil and cook the lasagna noodles according to the package directions until al dente. I drain them, rinse them under cold water, and drain them again.
I lightly grease a 9×13-inch baking dish with cooking spray.
Then I spread about 2 cups of meat sauce evenly across the bottom of the prepared baking dish.
I arrange 4 lasagna noodles over the sauce, then spread half of the ricotta mixture over the noodles.
I add another layer of meat sauce, followed by 4 more noodles and the remaining ricotta mixture.
Next I spread another 2 cups of meat sauce over the ricotta. I arrange the final 4 noodles on top and cover them with the remaining meat sauce.
I sprinkle the mozzarella and Parmesan evenly over the top, then cover the baking dish with aluminum foil.
Then I bake the covered lasagna for 30 minutes. I remove the foil and continue baking for another 15 minutes, until the cheese has melted and the lasagna is hot throughout.
For a beautifully browned cheese topping, I switch my oven to broil and broil the lasagna for 2–3 minutes. I watch it closely because the cheese can brown quickly.
Then I remove the lasagna from the oven and let it rest for 15 minutes before slicing. I find this resting time important because it helps the layers set and makes cleaner slices.
