Description

A hearty homemade lasagna layered with rich Italian sausage and ground beef tomato sauce, creamy seasoned ricotta, tender noodles, mozzarella, and Parmesan. Baked until bubbly and golden, it is perfect for family dinners, gatherings, and meal prep.


Ingredients

¾ pound Italian sausage, casings removed

¾ pound lean ground beef

1 medium onion, diced

3 cloves garlic, minced

1 (6-ounce/170g) can tomato paste

1 (28-ounce/794g) can crushed tomatoes

1 (15-ounce/425g) can tomato sauce

1 tablespoon sugar

1 tablespoon dried Italian seasoning

1½ teaspoons salt

1 teaspoon dried basil

¾ teaspoon ground black pepper

1 (15-ounce/425g) container ricotta cheese

1 large egg, beaten

1 tablespoon chopped fresh parsley

½ teaspoon salt

¼ teaspoon ground black pepper

12 lasagna noodles

2 cups sliced or shredded mozzarella cheese

¼ cup grated Parmesan cheese

Cooking spray, for greasing the baking dish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a large Dutch oven over medium-high heat. Add the Italian sausage and ground beef, breaking the meat into smaller pieces, and cook for 6–8 minutes until browned.
  3. Stir in the diced onion and minced garlic. Cook for about 5 minutes, until the onion is softened and the garlic is fragrant.
  4. Add the tomato paste and cook for about 1 minute, stirring constantly.
  5. Stir in the crushed tomatoes, tomato sauce, sugar, Italian seasoning, 1½ teaspoons salt, dried basil, and ¾ teaspoon black pepper. Bring to a gentle simmer.
  6. Reduce the heat to medium-low and simmer for 15–20 minutes, stirring occasionally, until the sauce has thickened slightly.
  7. Meanwhile, combine the ricotta, beaten egg, fresh parsley, ½ teaspoon salt, and ¼ teaspoon black pepper in a medium bowl. Mix until evenly combined and set aside.
  8. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package directions until al dente. Drain, rinse under cold water, and drain again.
  9. Lightly grease a 9×13-inch baking dish with cooking spray.
  10. Spread about 2 cups of meat sauce evenly over the bottom of the prepared baking dish.
  11. Arrange 4 lasagna noodles over the sauce and spread half of the ricotta mixture over the noodles.
  12. Add another layer of meat sauce, followed by 4 more noodles and the remaining ricotta mixture.
  13. Spread another 2 cups of meat sauce over the ricotta. Arrange the final 4 noodles on top and cover with the remaining meat sauce.
  14. Sprinkle the mozzarella and Parmesan evenly over the top and cover the baking dish with aluminum foil.
  15. Bake covered for 30 minutes. Remove the foil and bake for another 15 minutes, until the cheese is melted and the lasagna is hot throughout.
  16. For a browned topping, switch the oven to broil and broil for 2–3 minutes, watching closely to prevent burning.
  17. Remove the lasagna from the oven and let it rest for 15 minutes before slicing and serving.

Notes

For an all-beef version, replace the Italian sausage with an equal amount of additional ground beef and add a little extra Italian seasoning.

Mushrooms, zucchini, spinach, or bell peppers can be added to the sauce. Cook moisture-rich vegetables before assembling to prevent watery lasagna.

For extra heat, use hot Italian sausage or add crushed red pepper flakes to the meat sauce.

For a cheesier lasagna, add extra mozzarella, Parmesan, or shredded provolone between the layers.

Oven-ready noodles may be used instead of boiled noodles. Make sure they are surrounded by plenty of sauce and follow package baking instructions as needed.

The lasagna can be assembled ahead, covered, and refrigerated before baking. A chilled lasagna may require additional baking time.

Store leftovers covered or in an airtight container in the refrigerator for up to 3–4 days.

Freeze the lasagna whole or in individual portions in well-sealed freezer-safe containers.

Reheat individual servings in the microwave until hot throughout, adding a spoonful of sauce if desired to keep the pasta moist. Reheat larger portions covered with foil at about 350°F (175°C).

Let the lasagna rest for 15 minutes after baking to help the layers set and produce cleaner slices.

Serve with a green salad, roasted vegetables, steamed broccoli, or garlic bread.
