Description

Ingredients

1 lb lean ground beef

1 cup diced yellow onion

1 medium green bell pepper, diced

6 oz beef pepperoni, divided (3 oz chopped, 3 oz sliced)

1 tablespoon chopped garlic

2 1/3 cups pizza sauce, divided

1 tablespoon Italian seasoning

1 cup ricotta cheese

3 1/2 cups shredded mozzarella cheese, divided

7/12 cup cooked beef sausage, crumbled, divided

8 large flour tortillas


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium-high heat, breaking it apart as it cooks.
  3. Add the diced onion, green bell pepper, and chopped beef pepperoni. Cook until the vegetables are tender.
  4. Stir in the chopped garlic and cook for 2 minutes.
  5. Remove the skillet from the heat and mix in 1/3 cup pizza sauce, Italian seasoning, ricotta cheese, 1 cup shredded mozzarella, and 1/3 cup cooked beef sausage until well combined.
  6. Divide the filling evenly among the tortillas and roll them tightly.
  7. Arrange the rolled tortillas seam-side down in a greased baking dish.
  8. Spread the remaining pizza sauce over the tortillas. Top with the remaining mozzarella, pepperoni slices, and remaining cooked beef sausage.
  9. Bake for 20 to 25 minutes, until the cheese is melted, bubbly, and lightly browned.
  10. Let cool for a few minutes before serving warm.

Notes

Substitute ground turkey or chicken for a lighter version.

Add mushrooms, black olives, or jalapeños for extra pizza flavor.

Try provolone, cheddar, Monterey Jack, or Parmesan with the mozzarella.

Assemble up to 1 day ahead and refrigerate before baking.
