Ingredients
1 pound large shrimp, peeled and deveined
3 tablespoons chimichurri sauce
Extra chimichurri sauce for serving
Metal or soaked wooden skewers
Instructions
- Place the shrimp in a large bowl and toss with the chimichurri sauce until evenly coated.
- Cover and refrigerate for at least 30 minutes to marinate.
- Preheat the broiler and thread the marinated shrimp onto skewers.
- Arrange the skewers in a single layer on a baking sheet.
- Broil for 3 minutes.
- Carefully flip the skewers and broil for another 3 minutes.
- Remove the shrimp when they are pink, opaque, and fully cooked through.
- Serve immediately with extra chimichurri sauce drizzled over the top.
Notes
Add red pepper flakes to the chimichurri sauce for extra heat.
Alternate shrimp with bell peppers, zucchini, or red onion on the skewers for added vegetables.
Grill over medium-high heat for 2 to 3 minutes per side instead of broiling for a smokier flavor.
Squeeze fresh lemon or lime juice over the finished skewers for a citrus twist.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
Reheat gently over low heat to avoid overcooking the shrimp.
