Description

This creamy Tiramisu Chia Seed Pudding combines coffee-infused chia pudding with sweet vanilla Greek yogurt and a dusting of cocoa powder for a lighter take on the classic dessert. It’s perfect for breakfast, a healthy snack, or an easy make-ahead treat.

Ingredients

1½ tablespoons honey or maple syrup

½ cup chia seeds

1 teaspoon pure vanilla extract, divided

¾ cup cooled brewed coffee

¾ cup milk of choice

¾ cup plain Greek yogurt

½ tablespoon cocoa powder

Instructions

  1. In a medium bowl, combine the milk, cooled brewed coffee, and ½ teaspoon of the vanilla extract.
  2. Stir in the chia seeds until evenly distributed.
  3. Let the mixture rest for 2–3 minutes, then stir again to prevent clumping.
  4. Cover and refrigerate for at least 6 hours or overnight until thick and creamy.
  5. In a separate bowl, mix the Greek yogurt with the remaining ½ teaspoon vanilla extract and the honey or maple syrup until smooth.
  6. Layer the chia pudding, sweetened yogurt mixture, and a light dusting of cocoa powder into serving jars or glasses.
  7. Finish with another dusting of cocoa powder and serve chilled.

Notes

Use almond, oat, or coconut milk for a different flavor profile.

Substitute maple syrup for honey for a refined sugar-free option.

Add dark chocolate shavings between the layers for extra richness.

Mix espresso powder into the coffee for a stronger coffee flavor.

Top with fresh berries for a refreshing contrast.

Use dairy-free yogurt to make the recipe dairy-free.

Store in an airtight container in the refrigerator for up to 4 days.

If the pudding becomes too thick, stir in a splash of milk before serving.
