Ingredients
1½ tablespoons honey or maple syrup
½ cup chia seeds
1 teaspoon pure vanilla extract, divided
¾ cup cooled brewed coffee
¾ cup milk of choice
¾ cup plain Greek yogurt
½ tablespoon cocoa powder
Instructions
- In a medium bowl, combine the milk, cooled brewed coffee, and ½ teaspoon of the vanilla extract.
- Stir in the chia seeds until evenly distributed.
- Let the mixture rest for 2–3 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 6 hours or overnight until thick and creamy.
- In a separate bowl, mix the Greek yogurt with the remaining ½ teaspoon vanilla extract and the honey or maple syrup until smooth.
- Layer the chia pudding, sweetened yogurt mixture, and a light dusting of cocoa powder into serving jars or glasses.
- Finish with another dusting of cocoa powder and serve chilled.
