Description
This whipped white chocolate ganache is sweet, silky, and creamy with a rich white chocolate flavor. Once chilled and whipped, it becomes a fluffy frosting or filling perfect for cakes, cupcakes, macarons, pies, and tarts.
Ingredients
600 g white chocolate
200 ml heavy cream or double cream
Instructions
- Place the white chocolate in a large microwave-safe bowl.
- Pour the heavy cream over the chocolate.
- Microwave for 30 seconds, then stir well.
- Repeat in 30-second intervals, stirring after each interval, until the mixture is smooth and fully melted.
- Allow the ganache to cool slightly, then cover with plastic wrap touching the surface.
- Refrigerate for 2 hours, or leave at room temperature for 5 to 6 hours until set.
- Let the ganache soften slightly, then whip for about 2 minutes until smooth, fluffy, and spreadable.
- Use to fill, frost, pipe, or decorate desserts as desired.
Notes
Add a small amount of vanilla extract for a warmer flavor.
Mix in freeze-dried fruit powder for color and fruity flavor.
Use slightly more cream for a softer ganache.
Chill longer before whipping for a firmer filling.
Store in an airtight container in the refrigerator for up to 4 days.
Let softened ganache come closer to room temperature and gently re-whip before using.
Good-quality white chocolate melts more smoothly than most white chocolate chips.
Gel food coloring can be added after whipping.
