Description

This whipped white chocolate ganache is sweet, silky, and creamy with a rich white chocolate flavor. Once chilled and whipped, it becomes a fluffy frosting or filling perfect for cakes, cupcakes, macarons, pies, and tarts.


Ingredients

600 g white chocolate

200 ml heavy cream or double cream


Instructions

  1. Place the white chocolate in a large microwave-safe bowl.
  2. Pour the heavy cream over the chocolate.
  3. Microwave for 30 seconds, then stir well.
  4. Repeat in 30-second intervals, stirring after each interval, until the mixture is smooth and fully melted.
  5. Allow the ganache to cool slightly, then cover with plastic wrap touching the surface.
  6. Refrigerate for 2 hours, or leave at room temperature for 5 to 6 hours until set.
  7. Let the ganache soften slightly, then whip for about 2 minutes until smooth, fluffy, and spreadable.
  8. Use to fill, frost, pipe, or decorate desserts as desired.

Notes

Add a small amount of vanilla extract for a warmer flavor.

Mix in freeze-dried fruit powder for color and fruity flavor.

Use slightly more cream for a softer ganache.

Chill longer before whipping for a firmer filling.

Store in an airtight container in the refrigerator for up to 4 days.

Let softened ganache come closer to room temperature and gently re-whip before using.

Good-quality white chocolate melts more smoothly than most white chocolate chips.

Gel food coloring can be added after whipping.
